Lasagna. Need we say more.

Ingredients: 1 pound sweet Italian sausage 3/4 pound lean ground beef 1/2 cup minced onion 2 cloves garlic, crushed 1 (28 ounce) can crushed tomatoes 2 (6 ounce) cans tomato paste 2 (6.5 ounce) cans canned tomato sauce 1/2 cup water 2 tablespoons white sugar 1 1/2 teaspoons dried basil leaves 1/2 teaspoon fennel seeds

1 teaspoon Italian seasoning 1 tablespoon salt 1/4 teaspoon ground black pepper 4 tablespoons chopped fresh parsley 12 lasagna noodles 16 ounces ricotta cheese 1 egg 1/2 teaspoon salt 3/4 pound mozzarella cheese, sliced 3/4 cup grated Parmesan cheese

Directions:1- In a Dutch oven, cook sausage, ground beef,

onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley. Simmer, cov-ered, for about 1 1/2 hours, stirring occasionally.

2- Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.

3- Preheat oven to 375 degrees F.

4- To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13 inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprin-kle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.

5-Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

The Upper Cumber-land Tennessee Re-connect Community will hold a kick-off event to promote adult learner resourc-es and services March 15 from 5 to 7 p.m. at Warren County High School.The launch event, one of several scheduled throughout the Up-per Cumberland, will provide adults inter-ested in returning to college the opportu-nity to interact with advisors and higher education represen-tatives, attend short

seminars centered on workforce and college preparation, and learn the steps in the re-en-rollment process.“We are here to help adults interested in returning to finish col-lege or adults ready to turbocharge their career by changing their college focus to take advantage of this one-stop-shop oppor-tunity,” said Cindy Taylor, UCTRC direc-tor.The launch will bring together higher ed-ucation representa-tives from all over the

region: Motlow State Community College, Tennessee Tech, and Tennessee Centers of Applied Technology. The Upper Cumber-land Tennessee Re-connect Communi-ty was established through a statewide initiative to create a network of advisors for adult learners who are interested in com-pleting a postsecond-ary education creden-tial. It’s geared toward adult learners 25 to 64 years old to provide a personalized path to and through college.

Connections to local employers and higher education institutions will be included. “The Upper Cumber-land Tennessee Re-connect Community will play a significant role in bolstering our workforce by helping adults in our commu-nity overcome obsta-cles and better them-selves by completing a degree or credential,” said Warren County Executive Herschel

Wells. “Increasing the education level is the start to reducing pov-erty and unemploy-ment and increasing our quality of life.” The Tennessee Recon-nect initiative is part of Gov. Bill Haslam’s Drive to 55 plans to ensure 55 percent of Tennesseans are equipped with a col-lege degree or certif-icate by 2025, in order to meet job market demands.

1983 Reagan refers to U.S.S.R. as “evil em-pire” again

Speaking to a convention of the National Asso-ciation of Evangelicals in Florida on this day in 1983, President Ronald Reagan publicly refers to the Soviet Union as an evil empire for the second time in his career. He had first used the phrase in a 1982 speech at the British House of Commons. Some considered Reagan’s use of the Star Wars film-inspired terminology to be brilliant demo-cratic rhetoric. Others, including many within the international diplomatic community, denounced it as irresponsible bombast.

Reagan’s aggressive stance toward the Soviet Union became known as the Reagan Doctrine. He warned against what he and his supporters saw as the dangerous trend of tolerating the So-viets’ build-up of nuclear weapons and attempts to infiltrate Third World countries in order to spread communism. Advocating a peace through strength policy, Reagan declared that the Soviets must be made to understand we will never com-promise our principles and standards [nor] ignore the facts of history and the aggressive impulses of an evil empire. To do so would mean abandoning the struggle between right and wrong and good and evil.

Reagan proposed a policy that went beyond the Truman Doctrine of containment, urging active intervention. He vowed to increase U.S. military spending and to use force if necessary to roll back communist expansion in Third World nations. His administration provided military aid to Nicara-guan groups fighting the leftist Sandinista gov-ernment and gave material support to the Afghan mujahedeen in their ongoing war against Soviets. At the same time, he reassured Americans that he would pursue an understanding with totalitarian powers and cited the United States’ effort to limit missile development as a step toward peace.

Reagan’s doctrine came at the same time as a surge in international and domestic protests against the U.S.-Soviet arms race. His opponents blamed the administration for causing the largest increase in American military spending since the beginning of the Cold War, a policy that swelled the nation’s budget deficit.

The Soviet economy ultimately collapsed in the late 1980s, ending decades of communist rule in Russia and Eastern Europe. Americans disagreed as to the cause: while economists and Reagan’s critics claimed the Soviet empire had buckled un-der the weight of its own bloated defense spending and a protracted war in Afghanistan, Reagan and his supporters credited his hard-line anti-commu-nist policies for defeating Soviet communism.

Community spotlight on Rock Island State ParkThere are many water-

fall treasures in the mid-dle Tennessee area. One of them is the amazing Rock Island State Park. The park is located at 82 Beach Road in Rock Is-land, and can be reached during office hours at 931-686-2471.

Rock Island State Park is an 883 acre park locat-ed on the headwaters of Center Hill Lake at the confluence of the Caney Fork, Collins and Rocky Rivers. The rugged beau-ty of the park includes the Caney Fork Gorge below Great Falls Dam. These overlooks are some of the most scenic and significant along the East-ern Highland Rim. Great Falls is a 30 foot horse-shoe cascading waterfall, located below the 19th century cotton textile mill that it powered over 100 years ago. Rock Island became a Tennessee State Park in 1969.

The Caney Fork Riv-er Gorge contains scenic overlooks, waterfalls, deep pools and limestone paths perfect for hiking, swimming, fishing, kay-aking and exploring. The park’s whitewater sec-tions attract professional freestyle kayakers from around the world. It also features a natural sand beach and boating access on Center Hill Lake.

Rock Island State Park has some of the finest Tennessee State Park cabins. All ten, three bedroom, two bathroom cabins, are open year-round. They are located a half-mile from the nat-ural sand beach along the Caney Fork River. The park also has two camp-grounds offering 60 dif-ferent campsites that can accommodate RVs, trail-ers and tents.

The park has special events throughout the

season. Check with the office for more infor-mation about the Guid-ed Wildflower Tour on March 12-13 and 19-20, and the Spring Waterfall Tour Vacation Package on March 28-30.

The park has nine hik-ing trails with the Caney Fork Gorge area locat-ed below the dam being a very popular area for rock hopping, swimming and fishing. This beauti-ful limestone gorge runs between the Great Falls Dam and the Twin Falls. The area is populated with Great Blue Herons, wildflowers and water-falls. The Caney Fork Gorge may be accessed via the Old Mill Trail or the Upstream Trail.

The Collins River Na-ture Trail is a 3 mile loop along the outer edge of the Collin’s River pen-insula. The trail winds beside the riverbank and gives the hiker a chance to view white-tailed deer, pileated woodpeckers, Christmas ferns, and a wide variety of wildflow-ers.

The Eagle Trail is a 1.5 mile trail that runs from the Blue Hole picnic area to the Badger Flatt picnic area down by the park’s natural sand beach on Center Hill Lake. This trail is naturally stocked with an abundant array of wildflowers and song-birds.

The Moonshine Trail is a short half-mile trail that runs past the base of an old moonshine still and is teaming with wildlife.

Bluff Trail is a trail for Hikers and bikers. This 1.7 mile lollipop trail be-gins at the tennis court parking area. A short side spur blazed in blue brings hikers to a bench overlooking Center Hill Lake below.

The Upstream Trail

is half-mile one way. It departs from Twin Falls Overlook parking area going east (across cable) and it provides access to the upper gorge area in-cluding swimming spots such as the “Ice Hole” and “Warm Hole”.

The Blue Hole Trail is an extremely steep, wet and rugged half-mile, one way trail. It runs down a windy slope that extends along a beautiful waterfall seep. It is very strenuous and has many steep steps.

The Collins River Con-nector Trail is a two mile total loop branching off of the Collins River trailhead. It is a modest hike through hardwood groves taking the hiker to the sites of the very first frontier settlements and 3 cemeteries. A multi-use trail for hiking, jogging and mountain bikes. Hik-ers have the right of way.

The Old Mill Trail is a half-mile, one way trail. It departs from the Old Mill picnic area and it pro-vides access to the gorge on the Warren County side. It consists of steep stairs opening into the gorge below. From the bottom, hikers can rock hop or swim at their own risk. The trail and limited parking lot close at sun-down.

You should use extreme caution in the gorge. Stay alert, leave immediately if you hear the warning sirens or see rising wa-ters. Watch for slick rocks and swift currents. Do not jump into water of unknown depths.

The park hours are 7 a.m. to 10 p.m., with of-fice hours of 8 a.m. to 4 p.m.
