RIGHT Preparing the perfect dish is all about balance - some flavours may suppress, complement, or even overlap others. Co�ee should be disagreeable by nature, because it is basically bitter. Add a spoon of sugar, however, and our brain accepts it because the sweet taste masks the bitter. Salt, in turn, amplifies the range of fragrances, which is why it‘s so easy to detect when it‘s missing from food.
Tastes also vary in intensity. Bitter tastes, for example, can enormously a�ect our taste in extremely low doses. In fact, it is estimated that bitter ingredients are perceived almost 3000 times more intensely than sweet. It is therefore extremely important to regard how, and how much, we spice our dishes.
HOWD O W E P E R C E I V E T H E T A S T E O F F O O D ?
We use between two to six thousand taste buds in our tongues to distinguish between five basic tastes: sweet, sour, salty, bitter and a savoury taste called umami. Taste is however, just one part of the perception. As much as 85% of our perception of taste is derived from our sense of smell. Aromas are delivered to the brain through the nostrils and again through scent receptors in the backs of our mouths. Without the sense of smell, apples and onions would both register as sweet on the tongue, but we are all aware that the complete flavour sensation between the two is significantly di�erent.
I N P U R S U I T O F G O O D TA S T E TRY IT!There are quite a few experiments you can try to really appreciate the subtle flavours and aromas of food - be it in the trendy „dark“ restaurants, or simply eating a meal blindfolded. Alternatively, you could even close your nose to prove how much aroma means to enjoying a meal. The opposite is, of course, also true - try to take your time while eating and savour the entire experience. Savour the aroma of every bite, trying di�erent combinations and establishing which of these really complement the other.

SENSEGreat food engages and intrigues every sense. We‘ve already discussed how smell contributes to the flavour sensation, but think about how we approach unfamiliar food. First, we have a good look - our bodies are still wired to distinguish good foods from those that can potentially do us harm. Following the visual perception, we smell and then, once in our mouths, we taste while the chewing releases even more aromas.
We also feel the food - texture plays a huge part. Think about pasta... very few people enjoy pasta that is too soft and almost nobody prefers it raw and hard. Regardless of the taste, a good pasta dish can be spoiled by delivering the wrong texture.
PEPPER:A N A R T I N I T S E L F
Pepper certainly is one of the most versatile spi-ces to use on just about everything - from steak sauces to strawberries. It can add a whole new dimension to your dishes, but be mindful to only buy whole grains, as grounded pepper tends to lose its aroma quite quickly.
G R E E N P E P P E R : Unripe pepper fruit is cooked and freeze-dried or loaded into brine or vinegar. They have a mild, fruity taste and most often used for white meat on the grill.
B L A C K P E P P E R : Unripe pepper fruits that are air dried. Their flavour is less fruity, more citrusy, slightly sharp and a true all-rounder. Black pepper is perfect for steaks.
R E D P E P P E R : Ripened pepper fruit that are either pickled or dried. The manufacturing process is quite intensive, so they are less common and quite expensive. A fiery, fruity flavour, slightly sweet when dried. Ideal for game dishes and chocolate desserts.
W H I T E P E P P E R : White pepper consists of the seeds of the pepper plant, with the dark coloured skins of the pepper fruit removed. They have a slightly less compound taste than black pepper, with a gently nutty aroma. They are often used in light sauces, white meat and low fat fish.
PRACTICE DOES INDEED MAKE PERFECT
Mother nature has given us all the possible ingredients to create the perfect dish - time after time. Having said that, the culinary arts is one of patience, practice and experimentation. Fortunately, it‘s a great art to practice - it‘s one of the few where even a less than perfect outcome yields some pretty delicious results and, quite often, some very interesting learnings.
HERBS A L L I N G O O D T I M E
Creating great dishes with herbs is extremely dependent on timing. When preparing herbs, keeping it in the dish for too long might make the environment smell great, but most herbs lose their flavours after only twenty minutes. Therefore, we primarily use herbs just before the end of the grilling, or add them in the beginning and remove them during the process.

GRILLINGPERFECT YOUR METHOD
1. Prepare an indirect fire with 25 briquettes on each side and let it burn for 35 min.
2. Open and drain the pear halves. Keep the syrup if you want to make additional sauce.
3. Mix the pear halves, sugar, cinnamon, lemon zest and 20 ml lemon juice in a large bowl. Try not to break all the pears as they are soft.
4. Butter the pan well to prevent sticking. 5. Arrange the pears in a single layer in the pan and pour
over the syrup that remains. Break the left over butter into smaller pieces and place randomly between the pears.
6. Open the sheet of pastry. It is important to defrost the pastry beforehand as you will get better baking results that way. Cut the pastry into the shape of the dish and place on top of the pears. Tuck in the pastry a little on the sides.
7. When the fire is ready, place the pan on the grid for indirect cooking and close the lid.
8. Bake for 30 - 35 min until the pastry is golden brown and crisp. Remove from the fire.
9. The tart needs to rest for about 5 min before turning it out onto a tray. The temptation could very well be too strong to even bother to flip the tart out but if you decide to do it then do it now. If the caramel gets too cold it will struggle to come out. Place a tray or platter upside down on top of the tart and flip over. You can decide what works for you.
10. Serve with ice cream and custard.
METHOD
1. Place the flour, salt, sugar and yeast in the mixing bowl of an electric mixer.2. Mix the oil and water and slowly add the water to the flour with the mixer on a low speed. If mixing by hand, make a well in
the flour and water. Mix into a dough. The dough should be elastic but still quite firm.3. Let the dough prove in an oiled bowl or bag to double the size (20 - 25 min).4. Make a direct fire with approximately 45 - 50 briquettes but when spreading the coals concentrate the majority to the outer
edge of the bottom grid. Leave a few under the stone but when the stone is hot it will do most of the work itself.5. Do not pre cook the base. Roll out the base, add the toppings and slide onto the stone. You will probably need a flat spatula for
this and remember to sprinkle the stone with a little bit of flour to prevent the pizza sticking.6. Close the lid and let it cook until ready. It takes about 5 min depending on your fire.7. Serve as is or with a side salad.

APPLE• Slightly sweet but denser, fruity smoke
flavour. • Beef, poultry, game birds, pork

CHERRY• Sweeter, more delicate flavour than
hickory. Tends to burn hot, so use carefully.

MESQUITE• Rich and more subtle than hickory, but

Vary from spicy (bay leaves or garlic) to sweet (other seasonings), delicate to mild. Generally, herbs and spices with higher oil content will provide stronger fl avouring. Soak branches and stems in water before adding to fi re. They burn quickly, so you may need to replenish often.
GOOD FOOD MATCHES: Vegetables, cheeses, and a variety of small pieces of meat (lighter and thin-cut meats, fi sh steaks and fi llets).
GETTING STARTED:• WOOD
Start by soaking your wood in water — chunks need soaking for at least an hour, chips (including wine barrel chips) and aromatic twigs (grape vines or fruit wood twigs) need only 30 minutes. Shake o� all excess water before adding them to your fi re.
• WATER
Water adds moisture to the smoking process so meats come out fl avourful and tender. If you‘re using a traditional smoker with a water pan, try adding barbecue sauce, marinades, wine, beer, fruit juices, or herbs and spices to the water pan for additional fl avour. Be sure to keep the water pan full. For large roasts and turkeys, you may have to add water to the pan a couple of times during cooking. You can use a water pan with charcoal and gas grills, too. Check the water pan when you add charcoal. A watering can makes replenishing easy. When smoking cheese, add ice to the water pan so the cheese doesn’t melt above it.
• FOOD
Place food in the centre of the cooking grate above the water pan (if you are using one). Remember that smoke and heat escape every time you peek into the grill, so add 15 minutes to cooking time for each peek (more if you are smoking in cold weather). Boneless meats, such as beef brisket and pork shoulder, will shrink considerably during smoke-cooking, unless they have a heavy layering of fat (which you can simply cut o� before serving). Consider cooking your menu up to two days before serving as the smoke fl avour becomes richer in the refrigerator. That’s why smoked foods make great leftovers.

Virtually all Weber® Gas grills can be equipped with or are sold with a smoker attachment. The smoker attachment makes it easy to turn your grill into a hot smoker although you can also improvise with a foil pan.
Before preheating your grill, simply fi ll the water pan on the smoker attachment with hot tap water. Place pre-soaked wood chunks or chips/twigs in the other compartment or in a foil pan directly on the Flavorizer® Bars over the lit burner (use a separate pan for water if you are using a foil pan for the wood pieces).
INGREDIENTS
1 Leg of Lamb (deboned and butterfl ied, ask your butcher to do this for you)150 ml Lemon Juice (freshly squeezed)150 ml Olive oil10 ml Garlic, chopped5 twigs Rosemary30 g PaprikaSalt and black pepper250 ml Wood chips150 ml White wine
GRILLING METHOD: INDIRECTPREP TIME: 20 min MARINATING TIME: 3 days GRILLING TIME: 1 hour 30 minutes SERVES: Work on about 200 g raw, deboned weight per person for a main meal.
METHOD:3 days before cooking• Take a large plastic Ziploc bag and place the lamb inside. • Add the lemon juice, olive oil, garlic and rosemary and seal the bag. Try
to get most of the air out.• Massage the meat in the bag to ensure it is well covered by the
marinade and then refrigerate.• Take out the bag once a day to massage and refrigerate.
Day of preparation• Remove from the fridge about 2 hours before cooking to allow the
meat to get to room temperature.• Prepare an indirect fi re with 25 briquettes on each side and burn for
about 35 min until the briquettes are grey.• Remove the lamb from the bag and allow the marinade to drip o� as
much as possible.• Season with salt and pepper and then try to coat the lamb with an even
layer of the paprika.• Soak the wood chips in the wine and drain just before cooking.• Sprinkle half of the wood chips directly onto the fi re and place the lamb
in the middle of the grid.• Close the lid and cook for 30 min before adding the other half of the
wood chips.• Cook for a further 40 - 50 min (depending on the weight of the meat).
The best is to test the core temperature with a thermometer. When the core temp is 60 - 65˚C you should have a light pink in the middle. I don’t suggest cooking this over 70˚C if you like your meat more well-done.
• Leave the meat to rest for 5 - 10 min before slicing.• The intense fl avour of the smoked paprika together with the fl avours
from the marinade makes this perfect for any occasion.

TIP Always cook your meat from room temperature as it will cook more evenly.

• Always buy the best ingredients to achieve the best results
• Never defrost meat in the microwave or boiling water
• Remove meat from the fridge a day before braaiing and defrost in the fridge.
• Getting it out the fridge and allowing the meat to sit at room temperature for 20-30 minutes before grilling will help allow the fibres to warm up and relax a little and prevents the slight drop in grill temperature that occurs when cold meat is placed on it, making for faster cooking and juicier meat! This will also ensure that the meat is not tough and that the centre of a medium steak is uniformly warm.
THE PERFECT POSITION
Before lighting up, ensure that the grill is set up accurately as demonstrated in the user‘s manual. This is essential to achieve the best results.
ESTABLISH IF A DISH SHOULD BE COOKED USING THE DIRECT, INDIRECT OR BOTH METHODS.
Meat under 500g is normally ideal for the direct method and larger cuts of meat should be cooked using the indirect method i.e. full chickens, leg of lamb, bread and cake. For thick steaks, the grill must be set up with two heat zones - a hot zone to sear the steak and a colder zone to reach the desired doneness.
THE PERFECT FIRE
• Lumpwood or briquettes — is there a di�erence? Absolutely - lumpwood charcoal burns extremely quickly, making it much more diµcult to control the cooking temperature and creating excessive fly-away ash that can contaminate food. Compressed to a high density, premium quality charcoal briquettes burn longer, resulting in a much more consistent and even distribution of cooking heat and giving you much better results on the grill.
• When making a fire ensure that the coals have a grey layer of ash and that there are no more black bits visible before placing food on the grill.
• Don‘t use water to extinguish flare-up flames. When water hits hot cooking grates and flames, it can splatter, causing burns, or crack the porcelain enamel finish of the grill. The quickest way to extinguish flare-ups is to put the lid on the grill. The lid will reduce the amount of oxygen that feeds the fire, thus limiting or snuµng out the flare-ups.
KEEP A LID ON IT!
Remember to close the lid. Just about everything should be grilled with the lid on. The lid helps maintain a steady temperature, captures the smoky flavour better and provides for faster cooking, which means juicer steaks and more succulent seafood. The uneven air flow resulting from an open grill also contributes to flare-ups.
ONLY TURN ONCE OR TWICE
Many cooks succumb to the temptation to turn their food too often. If the heat is right, most foods only need to be turned once or maybe twice during cooking. Patience allows for caramelisation, the process that gives food cooked on a grill its special flavour. The longer food sits in one place, the deeper its flavour will be — provided you don’t burn it, of course.
IS IT READY YET?
We’ve all seen grilled food that was charred black on the outside but still pink and not properly cooked on the inside. However, with Weber grills it is easy to control the temperature by using the top vents on a charcoal grill to increase or decrease the airflow. A thermometer can also be used to double check if food is thoroughly cooked to preferred doneness.
BEFORE YOU SERVE
• Giving grilled food time to rest is the key to juicy, perfectly prepared meat. The resting process allows the juices to redistribute themselves throughout the meat.
• Cut the meat against the grain when serving.
SOME MORE USEFUL BRAAIING TIPS
• Burgers can pu� up in the middle as they cook, making the tops rounded and awkward for piling on the toppings. To avoid this, press a little indentation into the top of each raw patty with your thumb or the back of a spoon.
• Grill delicate fish fillets and small foods such as chopped vegetables in a perforated grill pan. It will keep the food from falling through the cooking grate.

DIRECT GRILLING INDIRECT GRILLING
DIRECT BRAAI: To grill using the direct method on a charcoal grill, spread prepared coals evenly across the charcoal grate. Set the cooking grate over the coals and place food on the cooking grate. Place the lid on the grill and lift it only to turn food or to test for doneness at the end of the recommended cooking time. STEP BY STEP GUIDE:1. Ensure that the bottom air vents are fully open. 2. Place fi relighter in centre and light.3. Once lit, add coal around and on top of fi relighters (in the
form of a pyramid).4. Once coals are grey, spread out on the surface of the grate.5. Place cooking grate on top and braai.
the coals is useful to collect drippings that can be used for gravies and sauces. It also helps prevent fl are-ups when cooking fattier foods. For longer cooking times, add water to the drip pan to keep drippings from burning. Place the cooking grate over the coals and place the food on the cooking grate, centered over the drip pan. Place the lid on the grill and lift it only to baste or check for doneness at the end of the suggested cooking time. To grill using the indirect method on a gas grill, preheat the grill with all burners on high. Then adjust the burners on each side of the food to the temperature noted in the recipe and turn o� the burner(s) directly below the food. For best results, place roasts, poultry, or large cuts of meat on a roasting rack set inside a disposable drip pan. For longer cooking times, add water to the foil pan to keep drippings from burning. STEP BY STEP GUIDE:1. In line with the front handle, place charcoal rails on the left
and right hand side of front handle. Ensure that the bottom air vents are fully open.
2. Place a fi relighter on either side and light.3. Once lit, add coals. Try to add equal amounts on both sides.4. Place a large Weber® drip pan in the centre and add fl uid.
The fl uid will prevent the grill from smoking and meat from drying out. Using spice and / or marinade will add additional fl avour to food.
5. Once a grey layer of ash appear on the coals, the cooking grate can be replaced.
6. Place food in centre of cooking grid (between the two fi res).7. Place the lid on the kettle with air vents fully open, facing
towards the front handle.8. Cook meat for approximately 25 min per 250 g / 1 hour per
kilogram.
INDIRECT BRAAI: The indirect method is similar to roasting, but with the added benefi ts of that grilled texture, fl avour, and appearance you can’t get from an oven. Heat rises, refl ects o� the lid and inside surfaces of the grill, and slowly cooks the food evenly on all sides. The circulating heat works much like a convection oven, so there’s no need to turn the food. Use the indirect method for foods that require 25 minutes or more of grilling time or for foods that are so delicate that direct exposure to the heat source would dry it out or scorch it. Examples include roasts, ribs, whole chickens, turkeys, and other large cuts of meat, as well as delicate fi sh fi llets.
