Cyklodekstryny
to węglowodany z grupy dekstryn, które składają się z 6, 7 lub 8 merów glukozy,
połączonych wiązaniami α-1,4-acetylowymi, tworzących razem strukturę cykliczną.
W zasadzie istnieją tylko 3 cyklodekstryny: α (zawierająca 6 merów glukozowych
w cyklu), β (7 merów) i γ (8 merów).
Cyklodesktryny produkuje się w stosunkowo łatwy
sposób ze zwykłej skrobi, w wyniku jej kontrolowanej
hydrolizy enzymatycznej z użyciem alfa-amylazy.
Cyklodestryny są łatwo rozpuszczalne w wodzie i
przyjmują w roztworze kształt toroidu, w którym
pierwszorzędowe grupy hydroksylowe są umieszczone
na zewnątrz, a drugorzędowe wewnątrz. Dzięki temu,
wnętrze toroidu posiada cechy hydrofobowe (nie
lubiące wody) a związki jako całość są hydrofilowe
(lubiące wodę) i rozpuszczalne w wodzie.
